1/4 cup quick cooking oats
1/2 cup milk
2 tsp brown sugar
1/2 tsp cinnamon
1/4 cup raisins
Heat the milk in a sauce pan, but don't boil. Mix with oats until absorbed. Or, microwave milk and oats 1 minute at a time to prevent boiling over. Mix in sugar and cinnamon. Top with raisins. I used to mix in the raisins, but somebody decided he doesn't like the raisins mixed in and that is melt down territory. I know, really?
I also like to finely chop apples and sometimes add nuts. Good, hearty stuff.
*Of course, oatmeal is fantastic source of dietary fiber. Did you know it also a great source of iron? So are raisins, so that's a double iron hit, which we're always looking for. Oatmeal is also a good source of Thiamin (vitamin B1). Thiamin helps cells convert carbohydrates into energy, great since oatmeal has a lot of carbs. It's also essential for heart, muscle and nervous system functioning. What better way to start the day?
